Sourced from the prestigious Betania Estate in Huila, Colombia – home to the Chiroso variety, a relatively recent discovery from the Urrao region of Antioquia. The name "Chiroso" means "uneven" in reference to its irregular leaf arrangement, but this variety has proven anything but ordinary. In 2014, local farmer Carmen Montoya won the Cup of Excellence with Chiroso, propelling this once‑obscure bean to international fame. Grown at high altitudes in the lush Colombian landscape, this coffee reflects the exceptional terroir of Huila.

Washed – Double Fermentation: The Secret to Rich Sweetness
The washed process, dating back to the mid‑18th century, involves removing the outer skin and pulp before fermenting the beans in water to break down the mucilage. In this double‑fermentation method, the beans are fermented twice, allowing deeper flavour development while maintaining clarity and cleanliness. The result is a coffee that is exceptionally bright, with a crisp, refined acidity and a pristine, lingering sweetness.

Flavour Profile – A Symphony of Citrus, Spice and Sweetness
This coffee opens with vibrant notes of orange and anise, delivering a refreshing citrus lift. Delicate floral and vanilla sweetness intertwine, followed by rich caramel and dark chocolate depth. From Pour-Over to Espresso – No Compromise
Whether you prefer a slow V60 pour‑over, a French press, or a classic espresso, grind to suit your method. For espresso, aim for a fine‑sugar texture; for pour‑over, a medium grind. You'll get a bright, complex cup with layered citrus, spice, and chocolate notes – never harsh or flat.

Brewing Tips
V60 Pour-Over (Medium Grind)
- Dose: 15g coffee / 240ml water
- Water temperature: 88–90°C
- Brew time: 150s+
- Tip: For a stronger brew, increase water temperature slightly, reduce water volume, or extend extraction time.
Espresso (Fine Grind)
- Dose: 16–17g per shot (a measuring scoop is included)
- Ratio: 1:2 (e.g. 16g coffee → 32g espresso)
- Time: 25–30 seconds
- Best enjoyed as: Espresso, Americano, or milk‑based drinks (latte/cappuccino)
