100% Arabica (Sidra) · The Rising Star of Colombia
Sourced from the high-altitude region of Huila, Colombia – home to the remarkable Sidra variety. Sidra is a natural hybrid of Red Bourbon and Typica, originating from Ecuador. In 2012, 1,793 trees were planted experimentally, and after harvest, the variety's extraordinary potential was recognised. A further 4,300 trees were planted in 2015. Grown at altitudes between 1,650 and 1,800 metres, Sidra thrives in Colombia's fertile volcanic soils, producing a coffee of exceptional complexity and elegance.

Anaerobic Washed Process – A Modern Approach to Flavour
The washed process dates back to the mid-18th century: ripe cherries are de-pulped, then fermented in water to break down the mucilage. In this anaerobic variation, the beans undergo a controlled oxygen-free fermentation, allowing for deeper, more complex flavour development. This modern approach, combined with traditional washing and sun-drying, produces a coffee with exceptional clarity and vibrant fruit notes.

Flavour Profile – A Symphony of Herbs, Fruit and Tea
Fresh lemongrass and bright lemon open the cup with a lively, refreshing lift. Passionfruit brings a vibrant sweetness, while bergamot adds a subtle, elegant bitterness that balances the cup. A graceful Earl Grey tea finish lingers, creating a clean and refined conclusion. This is a coffee of remarkable complexity – fresh herbaceous notes, bright fruit, and elegant tea-like character interwoven in perfect harmony.

The green beans arrive at our roastery in Northern Italy. Our master roasters apply a precise medium roast curve:

From Pour-Over to Espresso – No Compromise
Whether you prefer a slow V60 pour-over, a French press, or a classic espresso, grind to suit your method. For espresso, aim for a fine-sugar texture; for pour-over, a medium grind. You'll get a bright, complex cup with layered herbs, fruit, and tea notes – never harsh or flat.

Brewing Tips

V60 Pour-Over (Medium Grind)

  • Dose: 15g coffee / 240ml water
  • Water temperature: 88–90°C
  • Brew time: 150s+
  • Tip: For a stronger brew, increase water temperature slightly, reduce water volume, or extend extraction time.

Espresso (Fine Grind)

  • Dose: 16–17g per shot (a measuring scoop is included)
  • Ratio: 1:2 (e.g. 16g coffee → 32g espresso)
  • Time: 25–30 seconds
  • Best enjoyed as: Espresso, Americano, or milk-based drinks (latte/cappuccino)
