Sourced from the legendary Rumudamo Estate in Sidamo, Ethiopia – home to one of the highest coffee processing stations in Africa, situated at a breathtaking 2,390 metres above sea level. The thin mountain air and pristine environment create ideal conditions for producing coffee of extraordinary sweetness and complexity. This is the pinnacle of African natural-process coffee.

The Legacy of 74158 – A Story of Resilience
In the 1970s, Ethiopia faced a devastating coffee berry disease (CBD) that reduced production in some regions by 80%. In response, the Jimma Agricultural Research Centre (JARC) collected 639 wild coffee samples from across the country between 1973 and 1975. After extensive screening, 13 disease-resistant varieties were developed. Among them, variety 74158 – named for its 1974 collection number – emerged as a standout. Its disease resistance genes, sourced from wild Ethiopian varieties in the west, provide natural resistance to both CBD and coffee wilt disease (CWD), reducing the need for pesticides and aligning with sustainable agriculture principles. With a five-month maturation period, slow growth at high altitude, and a small bean size, 74158 develops concentrated flavours and exceptional depth, making it a variety of both quality and sustainability.
Natural / Sun-Dried Process – The Secret to Sweetness
Unlike traditional methods, the beans are sun-dried with the fruit flesh and skin intact, allowing the natural sugars to concentrate within the bean. This traditional sun-drying method preserves more of the bean's inherent flavours and sweetness, elevating the cup to a new level of richness and depth. The result is a coffee that is intensely sweet, complex, and utterly captivating.

The green beans arrive at our roastery in Northern Italy. Our master roasters apply a precise medium roast curve:

From Pour-Over to Espresso – No Compromise
Whether you prefer a slow V60 pour-over, a French press, or a classic espresso, grind to suit your method. For espresso, aim for a fine-sugar texture; for pour-over, a medium grind. You'll get a bright, complex cup with layered fruit and tea notes – never harsh or flat.

Brewing Tips
V60 Pour-Over (Medium Grind)
- Dose: 15g coffee / 240ml water
- Water temperature: 88–90°C
- Brew time: 150s+
- Tip: For a stronger brew, increase water temperature slightly, reduce water volume, or extend extraction time.
Espresso (Fine Grind)
- Dose: 16–17g per shot (a measuring scoop is included)
- Ratio: 1:2 (e.g. 16g coffee → 32g espresso)
- Time: 25–30 seconds
- Best enjoyed as: Espresso, Americano, or milk-based drinks (latte/cappuccino)
