Sourced from the renowned Worka processing station, located at the southern tip of Yirgacheffe town – one of Ethiopia's highest and most celebrated coffee-growing regions. Established in 2005 and now a proud member of the prestigious Yirgacheffe Coffee Farmers Cooperative Union, this station pioneered washed-process coffees in the region, giving birth to the elegant citrus and floral notes that have made Yirgacheffe a global icon.

Flavour Profile – A Symphony of Citrus & Floral
Delicate lemon blossom and honeyed sweetness rise with elegant clarity, especially when served cool. Bright, natural honey-like acidity mingles with a subtle fermented fruit-wine complexity, washing over the palate and leaving a round, lingering sweetness. A beautifully layered cup with vibrant citrus, floral aromatics, and a clean, refined finish.

Traditional Washed Process – The Secret to Bright Acidity
The washed process is what gives Yirgacheffe its signature clarity and elegance. Ripe cherries are carefully selected, de-pulped, and fermented in water to break down the mucilage before being washed and dried on raised beds. This meticulous process preserves the bean's bright, fruit-forward character while ensuring a clean, crisp cup with no unwanted ferment.

Each coffee undergoes rigorous quality assessment, ensuring every can delivers the rich, aromatic excellence that defines MARYLING Caffè.

The green beans arrive at our roastery in Northern Italy. Our master roasters apply a precise medium roast curve:

Medium Roast → lemon blossom, honey sweetness, bright citrus acidity, subtle wine-like complexity, and a clean, refreshing finish with mint and vanilla undertones

The beans are immediately sealed in airtight cans to preserve freshness. Each brew is a journey into the heart of Ethiopia – from first sip to last.

From Pour-Over to Drip – No Compromise
Whether you prefer a slow V60 pour-over, a drip coffee maker, or a classic espresso, grind to suit your method. For espresso, aim for a fine-sugar texture; for pour-over or drip, a medium grind. You'll get a bright, elegant cup with layered citrus and floral notes – never harsh or overpowering.

  • Water temperature: 88–92°C
  • Brew time: 120–150s+

Drip Coffee Maker (Medium Grind)

  • Dose: 15g coffee / 210–240ml water
  • Water temperature: 80–99°C
  • Brew time: 120–150s+
  • TDS: 1.22%

Espresso (Fine Grind)

  • Dose: 16–17g per shot (a measuring scoop is included)
  • Ratio: 1:2 (e.g. 16g coffee → 32g espresso)
  • Time: 25–30 seconds
  • Best enjoyed as: Espresso, Americano, or pour-over
